Amaretto Mouse Cheesecake
2 c graham cracker crumbs
½ c melted butter
Mix well and press in to 9" spring form pan. Chill.
1 envelope Knox gelatin
½ cup cold water
3-8oz cream cheese
1 ¼ cups sugar
1 5 oz can evaporated milk
1 teaspoon lemon juice
1/3 cup Amaretto
1 teaspoon vanilla
¾ cup heavy cream, whipped
Sprinkle Knox over water. Let stand 1 minute.
Stir over low heat until dissolved (3 minutes).
Beat cream cheese and sugar until light and fluffy.
Add Knox, milk, lemon juice, Amaretto and vanilla.
Fold in whipped cream and pour into spring form pan.
Chill 8 hours.
Garnish with chocolate sauce and raspberries.
