Servings Potatoes Butter/Marg Hot Milk Salt Pepper Makes
8 2 lbs 3 T 3/4 C 1/4 t /8 t 4 C
16 4 lbs 6 T 1 1/2 C 1/2 t 1/4 t 8 C
24 6 lbs 1/2 C 2-2 1/4 C 3/4 t 1/2 t 12 C
Peel and cut potatoes into 1 1/2-inch chunks. Bring potatoes with enough cold water to
cover to boil in large saucepan or Dutch oven. Reduce heat to medium and cook 16-18 minutes
until fork-tender. Drain in colander. Return potatoes to pan; cook over medium heat, stirring,
1 minute to dry. Mash as directed below.
Potato Masher: Mash potatoes in pan. Melt butter; stir in with salt and pepper.
Gradually stir in milk. Beat with large spoon 2 minutes until light and fluffy.
Food mill: Press potatoes in batches through mill into large bowl. Melt butter; stir in with
salt and pepper. Gradually stir in milk. Beat with large spoon 2 minutes until light and fluffy.
